Tuna & Avocado Salad

Well, I have some extra-ripe avocados that need a home and I’ve given up fish (but have some canned fish I still need to use) so here’s another leftovers recipe!  Great as a salad or as a garnish, good even in a sandwich!

Tuna & Avocado Salad

Serves 4, 237 calories per serving.

Ingredients:

  • 1 Avocado
  • 1 can kidney beans
  • 1 can tuna
  • 1 can diced tomatoes
  • 2 tbsp honey
  • 1 tbsp jam
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

Directions:

  1. Drain kidney beans, tuna, and tomatoes; then combine.
  2. I like to microwave the honey so it coats more easily (about 20 seconds); then combine.
  3. Add jam, cinnamon, and salt.
  4. Cube avocado and combine.

Mix it up, divide into four, and enjoy!
