Pita Bread
This simple pita bread would go very well with the Tuna & Avocado salad!

Ingredients:
- 3 1/2 cups bread flour
- 1 tsp salt
- 1 tbsp yeast
- 1 tsp sugar
- 1 tsp olive oil
- 1 1/3 cup water
Makes 12, 130 calories each
Directions:
- Sift flour and salt together in a bowl.
- Combine yeast, sugar, and 1/3 cup warm water; set aside for 5 minutes allowing yeast to activate.
- Make a well in flour/salt mixture; pour in yeast, 1 cup warm water, and olive oil.
- Gently stir; then knead for 10 minutes.
- Shape dough into a ball and set in a lightly greased, covered bowl for 1 1/2 - 2 hours (in warm place).
- Punch down and knead to smooth.
- Preheat oven to 500 degrees.
- Cut dough into 12 pieces, form into balls, roll out and place on dusted baking sheet; cover and let rest for 45 minutes.
- If you have a skillet, place in oven; when fairly hot, place two pitas in skillet and let bake for three minutes (pitas are done when tops are nice and brown); you may also do this with a cooking sheet.
- Wrap in a towel, then cool.
